Kale Chips — Beverley Simpson Fitness

The infamous Kale. It’s actually in season in the winter, but easy to get year round due to its popularity and health benefits.

This superfood is jam packed with vitamins including vitamin K, vitamin C and vitamin A. It is also a source for iron, protein and calcium. Along with kale’s anti-inflammatory properties, studies have shown the sulforaphane content is beneficial to your stomach, liver and immune system. This antioxidant dense leafy green is now a staple in one’s diet.

But they can be an acquired taste due to the bitter tasting nature of this vegetable, which is why so many don’t enjoy this vegetable.

The key here is to balance the flavors of your dish with fat, salt, and acid which will please even the pickiest palettes. This #FED (fast. easy. delicious.) snack can also be changed by the different flavors of extra virgin olive oil and salts to vary the flavors of the same snack.

Prep Time: 5 min Cook time: ~ 10 – 15 min Total Time: 15 – 20 min
Serves 4-6
Ingredients:
Bag of Kale or 2 Cups of Kale
1 tbsp of EVOO ( I use ALL KINDS of flavors)
Garlic/Onion Salt to taste or Salt
1 lemon
Optional 1 tbsp parm cheese to taste

Directions

Preheat the oven to 375. Line a medium sized cookie sheet with parchment paper or tinfoil. Spread the 2 cups of kale on the sheet. Toss in the tablespoon of EVOO, squeeze the juice of a lemon, salt to taste. Sprinkle parm cheese on top. Roast in the oven for 10 – 15 minutes and serve.
